Birthday Cake

So today was my sisters 18th birthday (wooho no more stolen id card ) so decided to make some special birthday treats for her, first off Chocolate Mint Cake (here it goes my first proper baking post)

Ingredients for cake:

125g chocolate ( I used milk chocolate as sister does not like dark chocolate but I think it would have been nicer with dark)
50ml milk
150g soften unsalted butter
150g caster sugar
3 eggs
200g plain flour
2 tsp baking powder
100g after eight mints (broken)

Method:

Preheat the oven to 180C
Break chocolate into pieces and melt together with the milk in a glass bowl over a sauce pan of hot water, then set aside

Cream the butter until soft and fluffy then add sugar, can do this in a free standing mixer but I prefer to do it by hand (less washing up that way or so I find) but to do it by hand you must make sure that the butter has been softened

Add melted chocolate/butter and continue mixing because not to add the chocolate while it is still hot or you will run the risk of scrambling the eggs in the next step
Add eggs one at a time mixing well after each egg

Sift in flour and baking powder and mix well. Make sure not to leave any flour at the bottom or on the sides off the bowl.
Gently fold in broken mints

Pour into prepared baking tin and bake for 40-45 minutes putting a cake testing stick in and it should come out clear. Do not over bake as they are meant to have a brownie like texture.

Allow to sit for at least ten minutes in tin.
Completely cool on wire rack before icing.

Icing ingredients:

15g after eight mints
250g icing sugar
100g unsealed butter
Mint essence
Green food dye (optional)
2 tbsp lemon juice

Icing method:

Mix together icing sugar and butter
When creamed add mint essence and after eight mints followed by lemon juice
Add food dye

Final thoughts, wouldn’t personally eat a whole cake of it, not to fond of minty flavour things and would have been better with dark chocolate to make the whole cake less sweet. But recipe very easy to make would rate it 6.5/10
