Blackberry and Apple Muffins

I recently bought a cupcake magazine because my true baking love will always be cupcakes, but sadly at the moment we are not meant to be ( I’ve been placed on a cupcake ban due to over baking them :( ) so really I just bought the magazine to drool over so decided to bake the nearest things to cupcakes I could… MUFFINS :D

Ingredients:

  • 250g self-raising flour
  • 175g unsalted butter
  • 175g light muscovado sugar
  • 1/2 tsp cinnamon
  • 2 tbsp demerara sugar
  • Zest of one orange
  • 1 small apple
  • 2 eggs
  • 2 tbsp whole milk
  • 1 tsp baking powder
  • 100g blackberries

Method:

  1. Preheat the oven at 180
  2. In a large bowl rub the flour, butter and muscovado sugar together to make fine crumbs013
  3. Take out about 4-5 tbsp of this mixture and put in a bowl and mix with the cinnamon and demerara sugar. This will be a crumble on top014
  4. Grate the apple down to the core and put it in a bowl, mix in the eggs, milk and orange zest.015
  5. Stir in the baking powder into the crumble mixture then add in the liquid mixture and mix through but do not mix too much.. this will cause rubbery muffins
  6. Then fold in the blackberries and pop into cases, then sprinkle some crumble over the top and pop in the oven016
  7. Allow to bake for around 20mins or until a cake tester comes out clean

Carrot Cake (valentines edition)

Ok so I maybe a tad late in posting a valentines cake, I’ve just been putting this one off so much, I dunno why. I decided on valentines day I would try bake a cake, the idea popped into my head of a carrot cake since the last one I made tasted amazing but looked so god awful, it was lopsided and wonkey and I used 2 different shaped tins and since now I’ve learnt what not to do when baking one I decided I’d try my skills at baking it again… This time didn’t turn out too bad at all Continue reading

Lemon Poppy Seed Muffins

So after what I would call an extensive search I finally found poppy seeds after going to the whole salers (musgraves cash and carry), apparently you can’t seem to get these in any of the local supermarkets and even tried some of the health food stores I passed by, although this could just be me being very blind and missing them or not looking in the right places for them… I tend to miss things that are right in front of me so this could well be the case here too. These are inspired by starbucks skinny (as if anything tasty can ever be described as this) lemon poppy seed muffins which I became obsessed with in my final year of school and first year of college.

Chocolate Chip Cookies

I’ve been trying to find the perfect cookie for ages, none seem to be fitting the bill for me though every recipe I find that states its the “perfect cookie” just always fall short, they are always good but never quite enough, well in my opinion anyway… Always manage to be too crunchy, too chewy, too thin or too thick, even once managed to make them taste like fried eggs. Anyway this is the closest I’ve come to the “perfect” chocolate chip cookie for now.

Ingredients:

  • 90g flour
  • 75g melted unsalted butter
  • 90g brown sugar
  • 45g white sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla essence
  • 150g of chocolate chips

 

No yeast doughnuts

Decided to see if my talents stretched to making doughnuts… Turns out I’m not actually too bad at it :)

Ingredients: 

  • 390g of plain white flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tsp nutmeg
  • 2 eggs
  • 165g normal white sugar
  • 1 and half tsp vinilla essence
  • 40g melted Unsalted butter
  • 120ml room temp milk

Oatmeal cookies

These are the first cookies I’ve made without following any sort of recipe :) and I must say they turned out quite well if I do say so myself they have walnut, oats, chocolate and some cinnamon ( I don’t quite know why i added these they would have been fine without it but it was just sitting beside me so just popped some in) These will store well for a few days in a closed tin ( I used an old roses tin from Christmas, does the job well )

Mars Bar Cake

I also made these for my sisters birthday as kind of a safe bet, as sometimes my baking can go a bit wrong (ha) but these never fail me.. they are like my go to and they are quick and simple to whip up.

Ingredients:
10 snack size mars bars
100g of butter
2 tbsp of golden syrup
200g corn flakes / rice krispes
